Steffan was the proud winner of the 2014 Caterer Licensee and Hotelier student chef of the year in a very hotly contested and close contest.
The competition which saw contestants from all over the country consisted of students creating a chicken dish using fresh ingredients in 40 minutes.
Steffan’s winning dish of Roasted Chicken, Baby Spring Vegetables, Truffle Pomme, Gewürztraminer Wine Sauce impressed the judges. A close second was Ruth Hanson of the renowned Ritz hotel.
In fact, the competition was so close the Caterer Licensee and Hotelier donated a third prize awarded to Ryan Bonds of South Thames College, who came a very close third.
Judge Luke Matthews, executive chef of the renowned an award-winning hotel Chewton Glen said “we have been so impressed with the standard of entries and quality of dishes produced. The students displayed a real flair, passion and imagination. We had a very difficult job in picking a winner”.
The Wessex salon Culinaire saw over 500 chefs over two days take part in Live Hot, Live Cold, Restaurant and Display, with scores of classes-from a British game main course in the Live Hot section right through to napkin folding in the Restaurant Table Display. Chef Director of the prestigious New Forest Cookery School, International Hotel School and Head of Hospitality at Brockenhurst College, said “It has been a fantastic two days, we have had entries from all over the country, and once again the standard, and the enthusiasm that has been shown has made us all here immensely proud to have hosted this prestigious event”
Editor of the Caterer Licensee and Hotelier Peter Adams presented the prizes for the student chef of the year competition, said “this is now our ninth year in sponsoring this competition, and we are immensely proud to be able to play our part in encouraging young chefs. Once again, the standard has been exceptionally high and it is wonderful to see such passion from young chefs, I can only say I am glad I was not a judge today, to me they were all winners”
