Cream of Carrot Soup

An ideal recipe to warm your customers up on cold winter days!

Creates 20 servings.

Ingredients:

4 medium onions
1.25kg mashed cooked or canned carrots
225gm butter, or other fat
225gm fine bread crumbs
2.25 litre stock
1 tablespoon salt
Pepper to taste
1 litre evaporated milk

Method:

  1. Cook chopped onions slowly for 5 minutes, without browning
  2. Add crumbs, broth, salt, pepper and sugar
  3. Simmer 20 minutes
  4. Add carrots and milk
  5. Reheat and serve
  6. Raw carrots may be put through food chopper or grated and cooked with the onions in the stock.
