An ideal recipe to warm your customers up on cold winter days!
Creates 20 servings.
Ingredients:
4 medium onions
1.25kg mashed cooked or canned carrots
225gm butter, or other fat
225gm fine bread crumbs
2.25 litre stock
1 tablespoon salt
Pepper to taste
1 litre evaporated milk
Method:
- Cook chopped onions slowly for 5 minutes, without browning
- Add crumbs, broth, salt, pepper and sugar
- Simmer 20 minutes
- Add carrots and milk
- Reheat and serve
- Raw carrots may be put through food chopper or grated and cooked with the onions in the stock.
